Summer is a wonderful excuse to become a vegetarian, there's so much produce and it's bursting with flavor. These stuffed peppers are a perfect example, who needs ground beef, lamb or pork when you've got heaps of zucchini, spinach, tomatoes, onions and corn to use up. I'm so enjoying the farmer's market which comes to town every Sunday. There's no plan to my shopping I'm afraid, I'm out of control and end up with WAY too much produce. Then it's a challenge to cook it all. These peppers are the perfect recipe to help me, they certainly pack a nutritional and flavorful punch!

Hold on! Wait a minute! It's summer! doesn't that mean the kids are supposed to be running around fully recharged, glowing with health and vitality? Well not in my neck of the woods. Every time I turn around another one has a come down with a virus, cold or some such malady. The only way I can possibly cope with this unwelcome intrusion of sickness is to make soup. Soup is therapy. Not only for the recipient but for the cook. It makes everything thing seem alright and under control. Which it's not. But I expect it will be - if we make and drink enough soup.

Next time you're grilling please give these a go. They're wonderfully delicious and you don't have to heat up your kitchen as you just pop them on the grill for a couple of minutes. You can feel virtuous too as they're a healthful treat. Peaches seem to be especially good this year, our local farmer's market is positively bursting with the most flavorful peaches. It's good to use just ripe ones for this recipe. Too mushy and they fall apart, too hard and they're still crunchy. If you can't track down agave nectar, use maple syrup or honey.

I always feel slightly guilty for so thoroughly enjoying July 4th. As a British girl should I really join in the celebrations with such gay abandon? I think enough water has flowed under the bridge (or across the Atlantic) to harbor any miffed feelings about being booted out of the Colonies.
July 4th parties seem to beg for cupcakes. These delectable creamy little cakes please everyone. There's nothing quite like lounging on a porch chair, licking the icing off a cupcake and watching the fireworks on a warm summer night.
