Sizzling Trout for Mother's Day!


Each year my husband hot foots it to New Hampshire and spends the weekend fishing. This year it just happened to fall on Mother's Day weekend.  I was doubtful if raw fish constituted a suitable Mother's Day present and expressed these doubts clearly before he left.  However, on his return I was presented with a cooler full of the most beautiful rainbow trout, gutted and cleaned and ready for the saute pan.  Slightly grudgingly I tossed these little fishes in a breaded mixture and browned them in the pan.  My reservations about such a gift melted along with the delectable morsels of fish in my mouth. I still wouldn't say no to some chocolates.  What was your best ever Mother's Day gift?




Breaded Trout.

Trout - gutted and cleaned.
1/2 cup of panko breadcrumbs
Pinch of sea salt and freshly ground black pepper
1 teaspoon of lemon zest
1-2 tablespoons fresh parsley, finely chopped
2 eggs
2 tablespoons unsalted butter
A couple of tablespoons of olive oil
Fresh parsley and lemon wedges for serving.

Pat dry the fish with paper towels.

On a large plate mix together, the breadcrumbs, salt, pepper, fresh finely chopped parsley and lemon zest. 

On another plate, lightly beat the eggs, season with salt and pepper.

Dip the fish in the egg mixture, then roll in the breadcrumb mixture.

Heat the butter and oil in a large saute pan until foaming.  

Lay the fish in the bubbling butter and oil and saute until the fish is golden brown, a couple of minutes per side depending on the size of the fish.

Remove to a platter, squeeze over some lemon juice and serve.

  1. Well those look quite delicious. I too cooked for Mother's Day and was fine with it.

    The best part of my Mother's Day is just having everyone together. I have to say though since we had our first almost 27 years ago now my husband has NEVER wished me a Happy Mother's Day - why? I'm not his mother he tells me over and over again. I still feel like he could say it but no - I'm not his mother!

  2. my goodness what a lovely treat fresh trout!I cooked Mother's Day, nothing new there, ha ha, I made salads potato, macaroni, tossed salad and cold sliced ham, a spring meal and pretended it wasn't snowing,

  5. We used to fish in Tennessee and eat trout for breakfast while camping. Gosh I miss those mornings - the trout was so fresh and melt in your mouth delicious. What a wonderful mother's day!

  9. Your trout look wonderful fried! What a great gift! I have fond memories of my dad bring home freshly caught Rocky Mountain Trout when I was a child. My mum always turned them into a delicious meal.

  13. These fish look perfect. Can still remember my mother cooking fish like this as a child. It always amazed me how deftly she dip the fish into the egg and flip it into the breadcrumbs, then sizzle it in the oil. I thought she was so clever! Much nicer than chocolates although maybe not as pretty.

  16. Your trout looks delicious and must be extra so, because they are really fresh! I spent Mother's Day having lunch with my in-laws, and went out in the evening all by myself, pampering myself with two new cookbooks and a nice dinner! :)

    the trout looks like a wonderful Mother's Day present. My father was a fisherman, but never went trout fishing.
    He used to bring home fresh caught river fish for my Mom to cook, and she hated fish. My best Mother;s Day present is spending time with my family.

  20. Hi Mary! Bummer that you had to cook up dinner on Mother's day, but how cool is it that your hubby brought you home some amazing fish that he caught with his own hand. That's pretty cool :)
    I took the day off from cooking and we hit the food trucks for lunch. We have the BEST food trucks out here. They're nothing like you would think when you hear the word food truck. They serve all organic, fresh and local fare. I mean they're truly gourmet. We then biked to our favorite restaurant for dinner. It was a fantastic day overall.
    Maybe take next Sunday off from the kitchen as a belated Mother's Day! :) xoxo, Jackie

  24. Love me some fresh caught fish. Not a fan of cooking it though, so this is why I leave it up to the chief to fry it outside. I must say, it sure looks delicious. My two precious girls always make my mother's day a day to be remembered...

  26. Gorgeous meal, Mary. I love a crisp breaded fish and yours looks perfect! Mother's Day was peaceful and lazy this year. I didn't lift a finger and we all just relaxed. I shopped for new clothes on Saturday, does that count as a great gift? ;)

  27. Hubby often goes to the canyon just a mile from our home and catches brook trout. They are tasty--I do like your recipe. Best ever Mothers Day Gifts--when my children were on 2 year missions for our church. They could only call home on Christmas and Mothers Day. Those Mothers Day calls were priceless.
